  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 pineapple, chopped
  • 2 cups purple grapes, halved
  • 2 cups green grapes, halved
  • 1 pound strawberries, hulled and quartered
  • 5 kiwi, peeled and quartered
  • 2 large mangos, chopped
  • 10 ounces blueberries
  • 6 ounces raspberries (optional)
  • 2 cans mandarin oranges (drained)
  • Fresh mint (for garnish)

Instructions

  1. In a large mixing bowl, combine apricot preserves, sugar, lemon zest, and lemon juice to create the glaze; stir until smooth.
  2. Chop the pineapple into small pieces and add to the bowl with the glaze.
  3. Halve the purple and green grapes; add them both to the mixture.
  4. Hull and quarter strawberries; incorporate them into the salad.
  5. Peel and chop kiwi into quarters; add to the bowl.
  6. Chop mangos close to the pit and score before adding them in.
  7. Gently fold in blueberries, raspberries (if using), and drained mandarin oranges.
  8. Serve immediately garnished with fresh mint for added flavor.
