  • 4 boneless, skinless chicken breasts
  • 1 (28-ounce) can crushed tomatoes
  • 4 chipotle peppers in adobo sauce
  • 1 white onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons avocado or canola oil
  • 2 teaspoons Kosher salt
  • 2 teaspoons ground cumin
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon ground paprika

Instructions

  1. In a large frying pan or Dutch oven over medium-high heat, add oil and sauté the diced onion for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  2. In a blender, combine crushed tomatoes, chipotle peppers, sautéed onion and garlic mixture, salt, cumin, black pepper, oregano, and paprika. Blend until smooth.
  3. Pour the blended sauce into the pan over medium-high heat and bring to a simmer. Add chicken breasts and cover slightly ajar; reduce heat to maintain a simmer.
  4. Cook chicken for 45-50 minutes until thoroughly cooked. Turn breasts halfway through for even cooking.
  5. Remove chicken from sauce; shred it with two forks and return it to the pan for an additional 10-15 minutes of simmering.
