Ingredients
- 4 bone-in chicken thighs
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup dried apricots, chopped
- 1/4 cup raisins
- 2 cups chicken broth
- 1/4 cup almonds, toasted
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon honey (optional)
Instructions
- Brown the chicken thighs in olive oil over medium heat until golden. Remove and set aside.
- In the same pot, sauté onions and garlic until soft.

- Return chicken to pot; add apricots, raisins, and chicken broth. Cover and simmer for 45 minutes until tender.
