- 4 medium Yukon Gold potatoes (about 600g), peeled and diced
- 1 medium onion (about 150g), finely chopped
- 2 medium carrots (about 150g), sliced into rounds
- 4 cups (960ml) low-sodium vegetable broth
- 1 cup (240ml) heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Prepare the vegetables by peeling and chopping the potatoes into small cubes, finely dicing the onion, and slicing the carrots.
- In a large pot over medium heat, add oil or butter. Sauté the onions until translucent, about 5 minutes; then add the carrots and cook for another 3-4 minutes.
- Stir in the diced potatoes and vegetable broth. Bring to a boil, then reduce to a simmer for about 15-20 minutes until the potatoes are fork-tender.
- Blend the soup using an immersion blender until smooth. For a chunkier texture, blend only half or mash some potatoes with a fork.
- Return to low heat and stir in heavy cream. Warm through without boiling for about 5 minutes.
- Season with salt and pepper to taste before serving in bowls garnished with fresh parsley if desired.
