Description

Polish Potato Soup, or Zupa Ziemniaczana, is a warm and inviting dish perfect for chilly nights. This creamy soup showcases tender Yukon Gold potatoes, vibrant carrots, and aromatic onions, creating a delightful blend of flavors that will comfort your soul. Whether served as an appetizer or main course, this simple yet satisfying recipe is sure to become a favorite in your kitchen.

Ingredients

Scale
  • 4 medium Yukon Gold potatoes (about 600g), peeled and diced
  • 1 medium onion (about 150g), finely chopped
  • 2 medium carrots (about 150g), sliced into rounds
  • 4 cups (960ml) low-sodium vegetable broth
  • 1 cup (240ml) heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the vegetables by peeling and chopping the potatoes into small cubes, finely dicing the onion, and slicing the carrots.
  2. In a large pot over medium heat, add oil or butter. Sauté the onions until translucent, about 5 minutes; then add the carrots and cook for another 3-4 minutes.
  3. Stir in the diced potatoes and vegetable broth. Bring to a boil, then reduce to a simmer for about 15-20 minutes until the potatoes are fork-tender.
  4. Blend the soup using an immersion blender until smooth. For a chunkier texture, blend only half or mash some potatoes with a fork.
  5. Return to low heat and stir in heavy cream. Warm through without boiling for about 5 minutes.
  6. Season with salt and pepper to taste before serving in bowls garnished with fresh parsley if desired.
