Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter
- 1 egg yolk
- 2–3 tablespoons ice water
- 1 1/4 cups whole milk
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- 1 vanilla bean or vanilla extract
- 4 egg yolks
- 1 tablespoon cornstarch
- 2 tablespoons unsalted butter
- 1 pint fresh strawberries
- 1 tablespoon apricot jam (for glazing)
Instructions
- Preheat oven to 375°F (190°C). Combine flour, powdered sugar, salt, and cut in cold butter until crumbly. Mix in egg yolk and ice water to form dough. Chill for 30 minutes.
- Roll out chilled dough and fit into tart pan. Bake for 15–20 minutes until golden brown. Let cool.
- In a saucepan, heat milk, cream, and sugar. Whisk egg yolks with cornstarch; temper with hot milk mixture. Cook until thickened.
- Pour custard into cooled crust; arrange strawberries on top.
- Brush with melted apricot jam and chill before serving.
