Instructions
- Reduce the apple cider in a saucepan over medium heat until it’s approximately ¼ cup. Allow to cool.
- Melt butter over low heat until browned; let cool.
- In a bowl, whisk flour, baking powder, baking soda, cornstarch, spices, and salt.
- Combine cooled butter and sugars in a large bowl; mix in the egg, reduced cider, and vanilla extract.
- Gradually stir in dry ingredients until just combined.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Drop dough by tablespoonfuls onto the sheet and bake for 9-11 minutes.
- Cool slightly before coating in cinnamon sugar and drizzling with icing.
