- 1 cup diced apples
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp apple cider (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add one large egg, vanilla extract, and 1/4 cup of apple cider to the creamed mixture. Mix until smooth.
- In another bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the wet ingredients. Stir until just combined.
- Gently fold in 1 cup of diced apples using a spatula.
- Scoop dough onto your prepared baking sheet. Bake for about 10–12 minutes or until lightly golden around the edges.
- Once cooled, drizzle your cookies with an apple cider glaze made from powdered sugar mixed with 1–2 tablespoons of apple cider.
