  • 1 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp apple cider (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add one large egg, vanilla extract, and 1/4 cup of apple cider to the creamed mixture. Mix until smooth.
  4. In another bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry mixture to the wet ingredients. Stir until just combined.
  6. Gently fold in 1 cup of diced apples using a spatula.
  7. Scoop dough onto your prepared baking sheet. Bake for about 10–12 minutes or until lightly golden around the edges.
  8. Once cooled, drizzle your cookies with an apple cider glaze made from powdered sugar mixed with 1–2 tablespoons of apple cider.
