  • 1/2 cup sour cream
  • 2 tsp vanilla extract
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup brown sugar
  • 1 1/4 cups all-purpose flour
  • 2 tbsp cornstarch
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a 9×5 loaf pan with cooking spray or parchment paper.
  2. In a small saucepan, reduce apple cider over medium heat until it thickens to about half a cup. Allow cooling slightly.
  3. In a bowl, mix cooled cider with sour cream and vanilla extract; set aside.
  4. Melt butter in the same saucepan; let cool slightly before adding it to the egg mixture.
  5. Beat eggs and brown sugar until frothy; slowly incorporate melted butter.
  6. Whisk together dry ingredients: flour, cornstarch, baking powder, baking soda, salt, cinnamon, and nutmeg.
  7. Combine wet and dry ingredients alternately until just mixed.
  8. Pour batter into the prepared pan and bake for approximately 55 minutes or until a toothpick comes out clean.
  9. Let cool for ten minutes in the pan before transferring to a wire rack.
  10. Brush with melted butter and coat with cinnamon-sugar mixture.
