  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • Tangzhong (from recipe above)
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the filling by cooking diced apples with apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, and salt in a saucepan until softened.
  2. For the dough, mix water and cornstarch to create tangzhong. Combine bread flour, sugar, yeast, and salt in a mixing bowl; add milk, cream, egg, vanilla extract, and tangzhong. Knead until smooth and let rise until doubled.
  3. Roll out dough into a rectangle; spread softened butter and sprinkle brown sugar and cinnamon. Spoon apple filling evenly over the dough and roll tightly.
  4. Slice into rolls and place cut-side up in a greased baking pan. Cover and let rise again until doubled.
  5. Bake at 350°F for about 30 minutes or until golden brown. While baking, prepare cream cheese frosting by mixing softened butter and cream cheese with powdered sugar, heavy cream, and apple butter.
  6. Drizzle frosting over warm rolls before serving.
