Ingredients
- 4 large russet potatoes (or 5 red potatoes)
- 1 cup mayonnaise
- 2 tablespoons red apple vinegar
- 1 teaspoon sugar
- ½ cup minced white onion
- 1 red bell pepper (julienned)
- 1 cup julienned carrot sticks
- 1 stalk celery (diced)
- ¼ cup fresh chives (minced)
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until fork-tender (about 15 minutes). Drain and let cool.
- While cooling, prepare vegetables: chop onion, dice celery, and julienne bell pepper and carrots. Set aside.
- In a mixing bowl, combine mayonnaise, vinegar, sugar, salt, pepper, chives, and mix until smooth.
- Once potatoes are cooled and diced, add them to the vegetable mixture along with the dressing. Gently fold until well combined.
- Chill for at least one hour before serving to enhance flavors.
