  • 3 lbs boneless chuck roast
  • 5 oz thick-cut bacon
  • 1 medium yellow onion
  • 1 large carrot
  • 4 garlic cloves
  • 3 cups red wine (Burgundy or Pinot Noir)
  • 8 oz cremini mushrooms
  • 2 tbsp all-purpose flour
  • Fresh thyme
  • Bay leaf

Instructions

  1. Preheat oven to 350°F.
  2. Season beef with salt and pepper.
  3. Cook bacon in a Dutch oven until crispy; remove and set aside.
  4. Brown the beef in the bacon fat until golden; transfer to a plate.
  5. Sauté onion and carrot until softened, then add garlic, tomato paste, herbs, and flour.
  6. Stir in red wine, scrape bottom of pot, then return beef and bacon.
  7. Cover and roast for about 2.5 hours until beef is tender.
  8. Sauté mushrooms and pearl onions separately; stir into stew before serving.
