  • 1 stick (8 tablespoons unsalted butter, at room temperature)
  • 1 1/2 cups confectioner's sugar (sifted)
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • Optional: Toasted finely chopped nuts
  • Optional: Toasted coconut

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine grated carrots, coconut, raisins, chopped nuts, sugar, oil, eggs, vanilla extract, and crushed pineapple.
  4. Gradually mix dry ingredients into wet ingredients until just combined—avoid overmixing.
  5. Pour batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
