  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed and chopped)
  • 4 tablespoons salted butter
  • 3/4 cup half & half (or dairy-free milk)
  • 1 teaspoon kosher salt
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Peel and thinly slice the onions. Heat olive oil in a skillet over medium heat, then add onions and cook for 40-50 minutes until caramelized.
  2. In a large pot, bring water to a boil and add chopped Yukon Gold potatoes. Cook for about 20 minutes until fork-tender.
  3. Drain the potatoes and mash them until smooth.
  4. Mix in butter, kosher salt, and half & half until creamy.
  5. Stir in half of the caramelized onions and Parmesan cheese until well combined.
  6. Serve topped with remaining onions and fresh herbs.
