Ingredients

  • ¾ cup apple cider vinegar
  • ¾ cup white vinegar
  • ½ cup water
  • 1 cup granulated sugar
  • 1½ tablespoons kosher salt
  • ½ teaspoon ground turmeric
  • pounds Persian cucumbers (or other pickling cucumbers)
  • ¼ cup thinly sliced onion
  • 1 teaspoon celery seeds
  • 1 teaspoon mustard seeds

Instructions

  1. Prepare the pickling brine by boiling apple cider vinegar, white vinegar, water, sugar, salt, and turmeric in a saucepan until dissolved. Cool to room temperature.
  2. Wash and dry two wide-mouth jars. Slice cucumbers and onions thinly.
  3. Divide celery and mustard seeds between jars; pack cucumbers and onions tightly.
  4. Pour cooled brine over vegetables until covered; secure lids tightly.
  5. Store in the refrigerator for up to two months before enjoying.
