Ingredients
- ½ cup dry quinoa
- ¾ cup water
- 3 cups chopped broccoli
- 1 medium honeycrisp apple
- ⅓ cup crumbled feta cheese (or extra sharp white cheddar)
- ⅓ cup toasted walnuts and almonds
- 2 ½ TBSP extra virgin olive oil
- 1 TBSP apple cider vinegar
- 1 TBSP dijon mustard
- ½ TBSP honey
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. In a medium saucepan, combine quinoa with water and bring to a boil. Reduce heat to low, cover, and simmer for about 13 minutes until the water is absorbed. Let sit covered for an additional 5 minutes before fluffing.
- While the quinoa cooks, chop broccoli into bite-sized pieces and dice the honeycrisp apple. Zest and juice the lemon.
- In a small bowl, whisk together olive oil, apple cider vinegar, dijon mustard, honey, salt, and pepper.
