  • 8 ounces burrata cheese
  • 23 large heirloom tomatoes
  • 1 cup cherry tomatoes
  • 1/2 cup assorted olives
  • 1/2 cup pickled peppers
  • 1/4 red onion, thinly sliced
  • 1/4 lb salami or prosciutto (optional)
  • Lettuce or micro-greens
  • Fresh herbs
  • 1/4 cup olive oil
  • 2 Tbsp lemon juice
  • 3 Tbsp apple cider vinegar
  • 1 tsp Italian herb seasoning
  • 1 tsp sugar
  • good pinch of coarse salt and pepper

Instructions

  1. Arrange olives in small bowls and place pickled peppers on one side of a large serving platter. Add a bed of greens on the opposite side.
  2. Wash and slice heirloom tomatoes into wedges; halve cherry tomatoes.
  3. In a bowl, whisk olive oil, lemon juice, vinegar, Italian seasoning, sugar, salt, and pepper for the dressing.
  4. Overlap the heirloom tomato wedges on one side and scatter cherry tomatoes for color.
  5. Tuck sliced onions around the tomatoes and add meats if using.
  6. Slice open burrata cheese and place it in the center of the platter; drizzle with dressing.
