Ingredients

  • Lasagna noodles
  • Mashed butternut squash
  • Ricotta cheese
  • Grated Parmesan cheese
  • Shredded mozzarella cheese
  • Fresh sage
  • Unsalted butter
  • Milk

Instructions

  1. Cook lasagna noodles according to package instructions until al dente; lay flat to cool.
  2. In a large bowl, mix butternut squash, ricotta, Parmesan, egg, sage, salt, and pepper until combined.
  3. Prepare the béchamel sauce by melting butter in a saucepan, adding flour, then whisking in warm milk until thickened. Stir in nutmeg and cayenne.
  4. Preheat oven to 375°F (190°C). Spread half the béchamel sauce in a baking dish.
  5. Fill each noodle with 2-3 tablespoons of the squash mixture and sprinkle with mozzarella before rolling up.
  6. Place roll ups seam-side down in the baking dish and cover with remaining béchamel and mozzarella.
  7. Bake for 30 minutes or until bubbly and golden.
