  • 3 lbs red potatoes
  • 34 celery stalks
  • 6 hard-boiled eggs
  • 2 green onions
  • 1½ tsp paprika
  • 1/4 tsp cayenne pepper
  • 1⅓ cups mayonnaise
  • ⅓ cup sour cream
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp thyme
  • ½ tsp oregano
  • 1 T apple cider vinegar
  • 2 T Dijon mustard
  • ½ tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. 1. Boil the potatoes in salted water for 12–15 minutes until tender. Drain and let cool.
  2. 2. In a bowl, whisk together paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, mayonnaise, sour cream, apple cider vinegar, Dijon mustard, salt, and pepper.
  3. 3. In a large mixing bowl, combine cooled potatoes with chopped eggs, celery, and green onions. Toss with two-thirds of the dressing until well coated.
  4. 4. Chill in the refrigerator for at least 30 minutes before serving. Just before serving, add any remaining dressing and garnish with parsley.
