- 1 1/2 pounds fresh jalapeno peppers
- 1 cup apple cider vinegar
- 3 cups granulated sugar
- 1 teaspoon garlic powder
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon celery seed
Instructions
- Wear food-safe gloves and slice the jalapenos into 1/4 inch rounds.
- In a heavy-bottomed pot, combine apple cider vinegar, sugar, garlic powder, turmeric, cayenne pepper, and celery seed. Bring to a boil and simmer for 5 minutes.
- Add sliced jalapenos to the pot and bring back to a boil. Cook for another 5 minutes while stirring occasionally.
- Using a slotted spoon, transfer jalapenos into sterilized jars leaving about 1/4 inch headspace.
- Boil the remaining syrup for another 6 minutes and pour over the jalapenos in the jars.
- Seal the jars with lids and process in a water bath canner for 10 minutes (half-pint) or 15 minutes (pint).
- Let cool completely before storing.
