Ingredients

- 150 g granulated sugar (¾ cup)
- 2 1/2 tbsp water (38ml)
- 150 g apple (5 oz diced)
- 30 g sugar (2 tbsp)
- 1 tsp lemon juice
- 80 g whipping cream (1/3 cup)
- 230 g white chocolate (8 oz chips or finely chopped bar)
- 4 g freeze-dried apple (4–5 tsp) finely ground
- few drops green food coloring
- 11 oz caramels
- 1 tbsp heavy cream
- 1 tsp kosher salt
Instructions
- Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
- Combine almond flour, powdered sugar, and freeze-dried apple powder in a bowl.
- Whisk egg whites until frothy; gradually add sugar and whip until stiff peaks form. Add food coloring as desired.
- Gently fold in the dry mix until combined but do not overmix. Pipe onto prepared sheets.
- Let shells sit for 30 minutes before baking for 15-20 minutes until they rise and form feet.
- Prepare green apple ganache by cooking diced apples with sugar and lemon juice; combine with heated whipping cream and white chocolate.
- Melt caramels with heavy cream for the salted caramel filling.
- Once shells cool, fill half with ganache, drizzle with caramel, and top with another shell.
