- 1/4 cup dry white wine
- 4 Tbsp caramelized onions (finely chopped)
- 1/3 cup parmesan-reggiano (finely grated)
- 1 Tbsp unsalted butter

Instructions
- In a medium saucepan over medium-low heat, warm the chicken broth until it simmers.
- In a large sauté pan, heat olive oil over medium heat. Add bacon pieces and cook until crispy, about 10 minutes. Remove with a slotted spoon and set aside.
- Lower the heat to medium-low; sauté shallots with a pinch of salt for 1-2 minutes until softened.
- Add minced garlic; stir for one minute until fragrant. Incorporate arborio rice, cooking for another 2-3 minutes.
