  • 180 g stone-ground grits
  • 720 ml water
  • 240 ml whole milk
  • 450 g large shrimp, peeled and deveined
  • 4 slices thick-cut bacon, diced
  • 1 small onion, finely chopped
  • 1 small bell pepper, diced
  • 2 cloves garlic, minced
  • 60 ml chicken broth or seafood stock
  • 60 g sharp cheddar cheese, grated

Instructions

  1. In a large saucepan, bring water, milk, and salt to a boil. Gradually whisk in grits; reduce heat to low and simmer for 20–25 minutes until creamy.
  2. Season shrimp with salt, pepper, and optional Cajun seasoning.
  3. Cook bacon in a skillet over medium heat until crisp; set aside but keep drippings.
  4. Sauté onion and bell pepper in bacon fat until soft; add garlic and cook for an additional minute.
  5. Add seasoned shrimp to skillet and sauté until pink and opaque.
  6. Deglaze with chicken broth or seafood stock and lemon juice; add cooked bacon back to skillet. Simmer briefly.
  7. Serve grits in bowls topped with shrimp mixture; garnish with green onions and parsley.
