Instructions

  2. In a mixing bowl, toss cauliflower florets with olive oil, cumin, paprika, chili powder, salt, and pepper until evenly coated.
  3. Spread cauliflower on a baking sheet in a single layer and roast for 20–25 minutes until golden.
  4. While roasting, whisk together sour cream or Greek yogurt, cilantro, lime juice, olive oil, salt, and pepper to make the crema.
  5. Assemble the tacos by layering roasted cauliflower in warmed tortillas and topping with cilantro lime crema and your choice of toppings.
