  • 1/8 teaspoon black pepper
  • 1.5 cups shredded cheddar cheese
  • 1 sleeve buttery crackers (about 32 crackers), crushed

Instructions

  1. Preheat oven to 350°F and lightly spray a 9×13-inch baking dish.
  2. In a large skillet, cook turkey bacon over medium heat until crispy (10-15 minutes). Drain on paper towels.
  3. Sauté onions in the rendered grease for about 5 minutes until translucent. Add minced garlic and cook for another minute.
  4. Stir in yellow squash and sauté for about 10 minutes until tender.
  5. In a large bowl, mix beaten eggs, sour cream, salt, pepper, and cheddar cheese until creamy.
  6. Combine the sautéed vegetables with the egg mixture; transfer to the baking dish.
  7. Mix crushed crackers with melted butter and sprinkle over the casserole.
