- 1 lb short pasta (rotini or fusilli)
- 12 oz romaine lettuce, chopped
- 1/2 cup freshly shredded parmesan cheese
- 1/2 cup Caesar dressing
- 1/3 cup ranch dressing
- 2 tablespoons olive oil
Instructions
- Season chicken pieces with desired seasoning (cajun or lemon pepper).
- Cook bacon in a skillet over medium-low heat until crispy; set aside.
- In the same skillet, heat olive oil and cook seasoned chicken for about 3–4 minutes per side until cooked through (internal temperature should reach 165°F).
- Boil salted water in a large pot; cook short pasta according to package instructions until al dente. Drain and rinse with cold water.
- In a large mixing bowl, combine cooled pasta, cooked chicken, crispy bacon, parmesan cheese, Caesar dressing, and ranch dressing. Mix well.
- Serve topped with extra parmesan cheese and enjoy!
