- ½ cup minced onion
- 1 red bell pepper, minced
- 1 yellow or orange bell pepper, minced
- 4 garlic cloves, minced
- 2 tablespoons freshly minced cilantro
- 2 cups shredded chicken breast
- 2 teaspoons chicken bouillon
- 1 tablespoon tomato paste
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- 10 Empanada Dough Shells
- 1 egg
Instructions
- Preheat the oven to 375°F and line a sheet pan with parchment paper.
- In a skillet, heat olive oil over medium heat. Sauté onion and bell peppers until softened (about 5 minutes).
- Add garlic and cilantro; cook for 1 minute until fragrant. Stir in shredded chicken, bouillon, tomato paste, onion powder, garlic powder, salt, and 1 cup of water. Simmer until most liquid evaporates (5–8 minutes).
- Assemble empanadas by placing heaping ⅓ cup of filling on one side of each dough circle. Brush edges with an egg wash (egg beaten with water), fold over and press edges firmly with a fork to seal.
- Bake for about 35 minutes or until golden brown.
