  • 12 oz chicken sausage, sliced into ½-inch rounds
  • 1 cup uncooked orzo pasta
  • 4 cups broccoli florets, cut into bite-sized pieces
  • 1 medium onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2½ cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add sliced chicken sausage and cook until browned, about 3-4 minutes. Set aside.
  2. In the same skillet, add remaining olive oil and sauté diced onion for 2-3 minutes until translucent. Stir in minced garlic, Italian seasoning, and red pepper flakes; cook for another 30 seconds.
  3. Add uncooked orzo to the skillet and toast for 1-2 minutes. Pour in chicken broth, scraping any browned bits from the bottom. Bring to a simmer, cover, and cook for about 8 minutes.
  4. Stir in broccoli florets and return cooked sausage to the skillet. Cover again and cook for an additional 4-5 minutes until broccoli is tender-crisp.
  5. Remove from heat; mix in grated Parmesan cheese and lemon juice. Season with salt and pepper to taste.
