  • 1 cup plain yogurt
  • 2 tablespoons fresh lemon juice
  • 1 & 1/2 teaspoons cumin
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 1 teaspoon salt
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons finely minced garlic
  • 1 & 1/2 pounds boneless, skinless chicken breast
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 1 large sweet onion
  • 2 teaspoons grated ginger
  • 2 cloves garlic
  • 2 teaspoons brown sugar
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garam masala
  • 8 ounce can tomato sauce
  • 1 & 1/4 cups heavy cream
  • 1/4 cup water (only if needed)
  • chopped cilantro for garnish

  • cooked basmati rice

Instructions

  1. Marinate chicken in yogurt, lemon juice, cumin, garam masala, red chili powder, salt, ginger, and garlic for at least 1 hour (overnight preferred).
  2. In a cast iron skillet, heat oil over medium-high heat. Cook marinated chicken in batches until browned; set aside.
  3. In the same skillet, sauté onions until soft. Add ginger and garlic; cook until fragrant.
  4. Stir in spices and tomato sauce; simmer until thickened.
  5. Incorporate heavy cream into the sauce and return chicken to the pan. Cook until fully cooked through.
  6. Serve over basmati rice or with naan bread.
