- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 yellow onion, diced
- ¾ cup diced carrots
- 2 ribs celery, diced
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- ½ teaspoon dried oregano
- ½ teaspoon mustard powder
- ¼ teaspoon ground sage
- ¼ teaspoon pepper
- Salt/Pepper to taste
- 2 teaspoons Italian seasoning
- 1 teaspoon Worcestershire sauce
- 1 teaspoon hot sauce
Instructions
- In a large pot, heat olive oil and butter over medium heat. Sauté onion, carrots, celery, and garlic for 5–7 minutes until softened.
- Season with salt, pepper, dried herbs, Worcestershire sauce, and hot sauce. Add the chicken breast and pour in the broth.
- Bring to a boil then reduce to simmer for 25–30 minutes until chicken reaches an internal temperature of 165°F.
- Shred the chicken and return it to the pot along with tortellini. Cook for an additional 5–7 minutes until tortellini is tender.
- Serve hot; garnish with fresh spinach or cream if desired.
