- 2 tsp baking powder
- ½ tsp baking soda
- ½ cup unsalted butter (cold and cut into small pieces)
- ¾ cup mini semi-sweet chocolate chips
- 1 cup heavy whipping cream (cold)
- 1 tsp pure vanilla extract
- 1 large egg (room temperature)
- 1 tbsp heavy whipping cream (for glaze)
- 1 cup powdered sugar (sifted)
- 1 tsp instant espresso powder (for glaze)
- 1 tbsp brewed coffee (or espresso)
- 1 – 2 tbsp milk or cream (or water)
Instructions
- Preheat the oven to 400°F.
- In a large mixing bowl, combine flour, brown sugar, baking powder, salt, and espresso powder.
- Cut the cold butter into the dry ingredients until coarse crumbs form; stir in chocolate chips.
- Whisk vanilla into heavy cream; pour into dry mixture in two parts and mix until just combined.
- Turn dough onto a floured surface, shape into an 8-inch circle, and cut into triangles.
- Place on a parchment-lined baking sheet and chill for 30 minutes.
- Brush with egg wash and bake for 20-25 minutes until golden brown.
