  • 1 cup milk (dairy or non-dairy)
  • 1 3/4 cups all-purpose flour (+ 3/4 cup separated)
  • 1/4 cup dark cocoa powder
  • 3/4 cup creamy peanut butter
  • 4 oz cream cheese (at room temperature)
  • 2 cups powdered sugar
  • 1/2 tbsp instant active dry yeast
  • 1/4 cup vegetable oil or melted coconut oil
  • 1/4 cup white sugar
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 23 tbsp sugar (for filling)
  • 1/4 cup chocolate chips (for filling)
  • 12 tbsp peanut butter (for frosting, to taste)
  • 1 tsp vanilla extract
  • pinch of salt
  • chopped peanut butter cups (for topping)

Instructions

  1. In a nonstick pot, heat milk, oil, and sugar to about 120F. Remove from heat and sprinkle yeast on top; let sit for a few minutes.
  2. Stir in flour and cocoa powder. Cover with a towel and let rise for about 1 hour.
  3. Add salt, baking powder, baking soda, and additional flour; knead until smooth.
  4. Roll out the dough into a rectangle, spread peanut butter over it, then sprinkle sugar and chocolate chips on top.
  5. Roll up tightly from one long side and slice into rolls. Place in a greased baking pan to rise for another hour.
  6. Preheat oven to 375F and bake for 15–18 minutes until tops are dry.
  7. For frosting, beat cream cheese, butter, peanut butter, powdered sugar, vanilla extract, and salt until smooth; frost cooled rolls.
