  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 ripe avocados (cubed)
  • 1/3 cup cilantro (finely diced)
  • 1/4 cup red onion (diced)
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 2 cups cooked cilantro lime rice
  • 1 can black beans (drained and rinsed)

Instructions

  1. In a mixing bowl, whisk together lime juice, lime zest, olive oil, honey, paprika, garlic powder, salt, and black pepper.
  2. Place chicken thighs in a large ziplock bag or shallow bowl; pour marinade over them. Seal or cover and marinate for at least 30 minutes (up to 6 hours).

  7. Let the chicken rest before slicing.
  8. Assemble bowls with rice base, topped with sliced chicken, black beans, corn, avocado salsa, and drizzle with chipotle sauce. Serve immediately.
