  • 11/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled, cored, and chopped into small pieces
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In one bowl, mix flour, baking powder, and salt. In another bowl, cream butter and granulated sugar until fluffy before adding eggs.
  3. Gradually combine dry ingredients with the wet mixture alternately with milk.
  4. Mix chopped apples with brown sugar and cinnamon; layer half the batter in the pan followed by half the apples, then repeat.
  5. Bake for 45-55 minutes until a toothpick comes out clean. Cool slightly before glazing.
