  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup confectioners' sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • ¼ cup freshly ground coffee beans (finely ground)
  • 1 cup confectioners' sugar (for glaze)
  • 2 tablespoons freshly brewed coffee (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, whisk together flour, baking soda, and cream of tartar.
  3. In another bowl, beat butter and both sugars until light and fluffy. Add eggs and vanilla; mix well.
  4. Gradually incorporate dry ingredients into wet mixture, then fold in ground coffee.
  5. Scoop rounded dough onto prepared sheets, spacing them about two inches apart.
  6. Bake for approximately 10 minutes or until edges are golden.
  7. While cooling, mix confectioners’ sugar with brewed coffee for the glaze and drizzle over cooled cookies.
