Enjoy them on their own or pair them with fruits or nut butter for an extra touch!


Ingredients

  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut flour
  • 3 Tbsp monk fruit sweetener (or other sugar)
  • 6 Tbsp cream cheese (about 3 oz)
  • 4 crushed Oreo cookies (gluten-free option available)
  • 34 Tbsp melted white chocolate chips (optional)

Instructions

  1. In a mixing bowl, combine all ingredients except for the white chocolate chips. Adjust the consistency as needed by adding more coconut flour if too soft or a splash of water or almond milk if too thick.
  2. Roll tablespoon-sized amounts of the mixture into balls and place them on a parchment-lined plate or baking sheet. Refrigerate for about 15 minutes to set.
  3. If desired, melt the white chocolate chips and drizzle over the chilled protein balls before serving.
