  • 2 8 oz boxes chickpea pasta shells
  • 1 can black beans (drained and rinsed)
  • 1 can black-eyed peas (drained and rinsed)
  • 1 can sweet corn (drained)
  • 3 bell peppers (green, orange, red)
  • 1/2 red onion
  • 1 pint cherry tomatoes
  • 1/4 cup chopped cilantro
  • Dressing: Juice of 2-3 limes, 1/4 cup olive oil, 1/4 cup red wine vinegar, 1 tbsp maple syrup
  • Toppings: 6 oz feta cheese (optional), salt to taste

Instructions

  1. Cook the chickpea pasta according to package instructions until al dente. Drain and cool.
  2. While pasta cools, chop the bell peppers, red onion, and tomatoes; rinse beans and corn.
  3. In a mixing bowl, whisk together lime juice, olive oil, red wine vinegar, and maple syrup.
  4. In a large bowl, combine cooled pasta with chopped veggies and beans. Pour dressing over the top and mix gently.
  5. Top with feta cheese before serving.
