  • 4 strips Turkey Bacon
  • 1/2 medium onion (chopped small)
  • 3 sticks celery (chopped small)
  • 2 medium carrots (peeled & chopped small)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups sweet corn (fresh or frozen)
  • 2 large Russet potatoes (peeled & diced)
  • Italian seasoning and cayenne pepper (optional)

Instructions

  1. Cook Turkey Bacon in a large pot over medium-high heat until crispy, about 10 minutes. Remove and set aside.
  2. Sauté onion, celery, and carrots in the same pot for about 5 minutes.
  3. Add garlic and cook for another 30 seconds. Stir in flour until combined.
  4. Gradually pour in chicken broth while stirring to dissolve the flour.
  5. Add cream, corn, potatoes, seasonings, and most of the bacon. Bring to boil then simmer until potatoes are tender (15–20 minutes).
  6. Season with salt and pepper to taste. Garnish with reserved bacon and serve.
