Ingredients
- 4 strips Turkey Bacon
- 1/2 medium onion (chopped small)
- 3 sticks celery (chopped small)
- 2 medium carrots (peeled & chopped small)
- 2 cloves garlic (minced)
- 4 cups chicken broth
- 1 cup heavy cream
- 4 cups sweet corn (fresh or frozen)
- 2 large Russet potatoes (peeled & diced)
- Italian seasoning and cayenne pepper (optional)
Instructions
- Cook Turkey Bacon in a large pot over medium-high heat until crispy, about 10 minutes. Remove and set aside.
- Sauté onion, celery, and carrots in the same pot for about 5 minutes.
- Add garlic and cook for another 30 seconds. Stir in flour until combined.
- Gradually pour in chicken broth while stirring to dissolve the flour.
- Add cream, corn, potatoes, seasonings, and most of the bacon. Bring to boil then simmer until potatoes are tender (15–20 minutes).
- Season with salt and pepper to taste. Garnish with reserved bacon and serve.
