- 2 cloves garlic (minced)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 pound orzo pasta
- Fresh parsley (for garnish)
Instructions
- Season pork medallions with salt and pepper. In a large skillet over medium-high heat, heat olive oil and sear pork for 4–5 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, reduce heat to medium, add minced garlic, and sauté for 1 minute. Pour in chicken broth and let simmer for 5 minutes until reduced by half.
- Lower the heat and stir in heavy cream; cook for an additional 2 minutes. Add Parmesan cheese and stir until melted.
- Return the pork to the skillet and simmer for another 2–3 minutes until heated through and coated with sauce. Stir in chopped parsley.
- Cook orzo according to package directions; drain thoroughly. Serve orzo topped with pork medallions and spoon extra sauce over each serving.
