  • 34 lbs ripe organic tomatoes
  • 2 garlic bulbs
  • ½ onion, chopped
  • 1 tbsp extra virgin olive oil
  • 1½ cups organic heavy cream (or coconut milk for vegan option)
  • 2 cups organic vegetable stock
  • 4 tbsp organic tomato paste
  • sea salt
  • On Everything All-Purpose Blend
  • smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C). Place tomato wedges on a baking sheet and wrap garlic bulbs in foil.
  2. Roast for 25-30 minutes until soft and caramelized.
  3. In a large pot over medium heat, sauté chopped onions in olive oil until translucent (5-7 minutes).
  4. Add roasted tomatoes and garlic to the pot along with vegetable stock, tomato paste, and seasonings. Stir well.
  5. Blend until smooth using an immersion blender or regular blender.
  6. Stir in heavy cream and simmer for an additional 5-10 minutes.
  7. Serve hot with your favorite sides.
