Ingredients
- 1 tablespoon olive oil or 1/4 cup water
- 1 large white onion, sliced
- 6 cloves garlic, minced
- 2 1/2 lbs. fresh tomatoes (roma, plum, or vine)
- 1/2 cup fresh basil leaves or 2 teaspoons dried basil
- 1/2 teaspoon dried oregano
- 2 cups low-sodium vegetable broth
- Salt and pepper to taste
- Vegan cream for serving
Instructions
- Prepare the onions and garlic; chop tomatoes into quarters.
- In a heavy-bottomed pan, heat olive oil or water over medium heat and sauté the onion until translucent (about 7 minutes). Add minced garlic and cook for another minute.
- Stir in chopped tomatoes, basil leaves (or dried), oregano, salt, pepper, and vegetable broth.
