Ingredients

Scale
  • 2 large boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon dried dill
  • 2 large eggs
  • 1/4 cup milk
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • 4 brioche buns
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh dill
  • 1 tablespoon lemon juice
  • 1 cup shredded lettuce
  • 8 slices of dill pickle

Instructions

  1. Slice each chicken breast in half horizontally to create four thin pieces.
  2. Use a meat mallet to gently pound the pieces to an even thickness of about 1/2 inch.
  3. In a shallow dish, combine the flour, salt, black pepper, garlic powder, onion powder, and dried dill.
  4. In another bowl, whisk together the eggs and milk until well combined.
  5. Place the panko breadcrumbs in a separate dish.
  6. Dip each piece of chicken into the flour mixture first, ensuring full coverage.
  7. Next, dip it into the egg mixture followed by coating it with panko breadcrumbs evenly.
  8. Heat vegetable oil in a skillet over medium-high heat until hot (about 350°F).
  9. Fry each piece of chicken for about 4–5 minutes on each side or until they are golden brown and cooked through.
  10. Drain on paper towels to remove excess oil.
  11. In a small bowl, mix together mayonnaise, chopped fresh dill, and lemon juice until smooth.
  12. Lightly toast your brioche buns to add extra flavor and texture.
  13. Spread dill mayo on both sides of each bun.
  14. Add shredded lettuce followed by a piece of fried chicken.
  15. Top with slices of dill pickle.
