- 2 pounds flank steak
- 3 tablespoons olive oil
- 1 large onion
- 3 bell peppers (red, green, yellow)
- 6 cloves garlic
- 1/2 cup white wine
- 1 cup chicken broth
- 14-ounce can crushed tomatoes
- Pimento-stuffed olives
Instructions
- Heat 2 tablespoons of oil in a skillet over medium-high heat. Season flank steak with salt and pepper, then sear until browned on both sides (about 4 minutes per side). Remove from heat.
- In the same skillet, sauté sliced onions and bell peppers until softened (5–7 minutes). Add minced garlic and cook for another minute.
- Stir in tomato paste, oregano, cumin, paprika, cloves, white wine, chicken broth, crushed tomatoes, carrot pieces, celery ribs, and bay leaves. Bring to a simmer.
- Return flank steak to skillet; cover tightly and reduce heat to low. Braise for about 80 minutes until tender.
- Shred beef with two forks and return to sauce along with olives and pimentos.
- Simmer together for an additional 10 minutes before serving over rice or in tortillas.
