Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)
- ⅓ cup mayonnaise
- ⅓ cup sour cream
- 1 large lime (zested and juiced)
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 garlic clove (minced)
- ¼ teaspoon kosher salt
Instructions
- Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper. Chill.
- Boil water in a pot, add shrimp, and cook for 2-3 minutes until pink.
- Create an ice water bath; transfer cooked shrimp into it for cooling. Drain and chop into bite-sized pieces.
- In a mixing bowl, combine chopped shrimp with cucumber, green onion, and dressing. Mix well to coat.
