  • 1 cup fresh raspberries
  • 6 oz dark chocolate (70% cocoa)
  • 1 cup heavy cream
  • 2 tbsp sugar

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whip the heavy cream with sugar until stiff peaks form.
  3. Fold half of the whipped cream into the melted chocolate gently, then fold in the remaining whipped cream.
  4. Mash half of the raspberries and layer them at the bottom of serving cups followed by chocolate mousse. Repeat layers until all ingredients are used.
  5. Chill in the refrigerator for at least two hours until set before serving with remaining fresh raspberries on top.
