Ingredients
- 4 fresh corn ears (or 16 oz frozen fire-roasted corn)
- 1/2 cup chopped red onion
- 1 jalapeño, seeded and chopped
- 2 cloves garlic, minced
- 1/4 cup cotija cheese (plus extra for topping)
- 2 tablespoons plain Greek yogurt
- 2 tablespoons mayonnaise
- Juice from 1 lime
- 1/2 teaspoon chili powder
- 1/4 teaspoon sea salt
- Fresh cilantro for garnish
Instructions
- Grill or boil the corn until charred or heated through.
- While cooling, chop the red onion, jalapeño, and garlic.
- In a large bowl, mix Greek yogurt, mayo, lime juice, chili powder, salt, and pepper until smooth.
- Once cooled, cut kernels off the corn cob and add to the bowl along with all veggies and cotija cheese. Toss gently.
