  • 4 fresh corn ears (or 16 oz frozen fire-roasted corn)
  • 1/2 cup chopped red onion
  • 1 jalapeño, seeded and chopped
  • 2 cloves garlic, minced
  • 1/4 cup cotija cheese (plus extra for topping)
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons mayonnaise
  • Juice from 1 lime
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon sea salt
  • Fresh cilantro for garnish

Instructions

  1. Grill or boil the corn until charred or heated through.
  2. While cooling, chop the red onion, jalapeño, and garlic.
  3. In a large bowl, mix Greek yogurt, mayo, lime juice, chili powder, salt, and pepper until smooth.
  4. Once cooled, cut kernels off the corn cob and add to the bowl along with all veggies and cotija cheese. Toss gently.
  5. Serve chilled or at room temperature with extra cotija cheese and cilantro on top.
