  • 1 cup lukewarm water (110°F/43°C)
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 cup fresh raspberries
  • ½ cup unsalted pistachios, coarsely chopped

Instructions

  1. In a large bowl, mix flour, sourdough starter, lukewarm water, sugar, and salt until a shaggy dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  3. Gently fold in raspberries and pistachios without crushing them.
  4. Place the dough in a bowl, cover with a damp cloth, and let it rise for about 2 hours or until doubled in size.
  5. Divide the dough into equal portions and shape each into bagels by poking a hole through the center.
  6. Let the shaped bagels rest on parchment paper for an hour while preheating the oven to 425°F (220°C).
  7. Bake for approximately 20 minutes until golden brown.
