  • 1 ½ cups low-sodium chicken broth
  • 1 ½ pounds boneless, skinless chicken breasts (bite-sized pieces)
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • 1 medium cucumber (sliced thinly for garnish, optional)
  • ½ cup crumbled feta cheese
  • ½ cup chopped fresh parsley or dill (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine rice, chicken broth, and chicken pieces. Stir until evenly distributed.
  3. Add garlic powder, onion powder, oregano, and paprika to the mixture; mix well.
  4. Pour tzatziki sauce over the top and gently fold it in.
  5. Cover with aluminum foil and bake for 45 minutes. Remove foil for the last 10 minutes to achieve a golden top.
  6. Once baked, let cool slightly and garnish with cucumber slices, feta cheese, and herbs before serving.
