  • 1 lb salmon, cubed
  • 1 ½ cup uncooked sushi rice
  • 3 large nori sheets
  • 1 tbsp light soy sauce
  • 1 tbsp Kewpie mayo
  • 1 tbsp sriracha
  • Cooking spray
  • 1 tbsp rice vinegar
  • 2 tsp white sugar
  • 1 tsp sesame oil

Instructions

  1. Cook sushi rice according to package instructions.
  2. Mix rice vinegar and sugar in a microwave-safe bowl; heat until dissolved. Combine with cooked rice.
  3. Preheat oven to 400°F.
  4. In a bowl, mix cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil.
  5. Cut nori sheets into squares and lightly grease muffin tin with cooking spray.
  6. Press a spoonful of sushi rice into each nori square in the muffin tin, followed by the salmon mixture on top.
  7. Bake for about 15 minutes or until salmon is cooked through and slightly golden.
