- ¾ cup canola oil
- ½ cup caster sugar
- ½ cup brown sugar
- 2 large eggs
- 2 cups grated carrots
- 1 ½ cups plain flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 60 g cream cheese, softened
- 1 ½ cups icing sugar, sifted
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 160°C (320°F) for fan or convection ovens, and grease a 20 cm (8 inch) round cake tin lined with baking paper.
