  • 1 ½ cups icing sugar, sifted

Instructions

  1. Preheat the oven to 160°C (320°F) for fan or convection ovens, and grease a 20 cm (8 inch) round cake tin lined with baking paper.
  2. In a mixing bowl, combine canola oil, both sugars, eggs, vanilla extract, and grated carrots until well mixed.
  3. Sift flour, baking powder, salt, and cinnamon over the wet mixture; stir gently until just combined.
  4. Pour batter into the prepared tin and bake for 45-55 minutes or until a skewer inserted comes out clean. Cool for 10 minutes in the tin before transferring to a wire rack to cool completely.
  5. For the frosting: Beat cream cheese and butter together until fluffy. Gradually add icing sugar, lemon juice, and vanilla; mix until smooth.
