Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup tzatziki sauce
Instructions
- In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts; coat well. Marinate for at least 15 minutes or up to overnight.
- Preheat grill or skillet over medium-high heat. Cook marinated chicken for about 6-7 minutes per side until internal temperature reaches 165°F (74°C). Let rest before slicing.
- While chicken cooks, dice cucumber and halve tomatoes.
- Layer sliced chicken over fresh greens in serving bowls and top with cucumber and tomatoes.
- Generously add tzatziki sauce over each bowl.
